Sauteed Collard Greens
Not quite the traditional way of cooking collard greens. But because of my low fat, plant-based diet, I had to come up with a healthier way of preparing collards. It’s very simple, just a little olive oil in a cast iron skillet, cleaned and cut collards with red and yellow bell peppers. A little Kosher salt, seasoning pepper, garlic salt, and chicken broth. Simple, easy and most delicious!!! A MUST TRY!!! if you’re okay with a little extra fat, let them cook down with some smoked neckbones, for extra taste. Simmer 30-45 minutes and they are done!
No specific measurements on the seasonings, season to your taste.
