On the menu tonight is eggplant seasoned well with olive oil, kosher salt, seasoning pepper, garlic powder, panko crumbs and parmesan cheese, asparagus, red and yellow peppers, heirloom tomatoes, quinoa, and purple potato. I really must say the purple potato was absolutely delightful!!!

The meal was so good!!! It was my first-time eating eggplant and purple potato, and I loved it! I am not a “vegetarian” or “vegan.” I am on a low-fat and “plant-based diet.” So, yes, I can have meat (fish and chicken). But in this meal, I didn’t miss the meat at all. It was tasty and filling.
